I am surprised that this saint is growing wheat on his head. I am still not yet understanding how does this happened and why he wants to put on his head?

Wow! I've only seen something like this in cartoons. I can't imagine how he can grow it on his head. You'd think you would need soil. Since I can't understand the language of the video, how is he explaining it?
